- 1Heat rapeseed oil in a large saucepan over medium heat. Add onions and cook until soft, adding a splash of water if they begin to stick.
- 2Add celery, leek, potato, and butter. Stir until the butter melts, then cover with a lid and sweat for 5 minutes. Remove the lid.
- 3Pour in vegetable stock and add the chunky broccoli stalks. Cook for 10–15 minutes until all vegetables are tender.
- 4Add the remaining broccoli florets and cook for 5 minutes more.
- 5Transfer carefully to a blender and blitz until smooth.
- 6Stir in the Stilton cheese, leaving a few small lumps for texture. Season with black pepper and serve.
