- 1Preheat oven to 200°C (fan 180°C).
- 2Heat olive oil in a pan and fry sliced onions with thyme sprigs until softened and lightly coloured, about 5 minutes.
- 3Spread a layer of thinly sliced potatoes over the base of an oiled 1.5-litre gratin dish.
- 4Sprinkle a layer of the cooked onions over the potatoes.
- 5Continue alternating layers of potatoes and onions, finishing with a final layer of potatoes.
- 6Pour vegetable stock over the layered potatoes until just covered.
- 7Bake for 50–60 minutes until the potatoes are tender and the top is golden and crisp.
