- 1Soak the potatoes in just-boiled water for 30 minutes, then drain and air-dry for 5 minutes.
- 2Heat the air fryer to 200°C. Toss the potatoes with 1 tablespoon olive oil, 0.5 teaspoon salt, and freshly ground black pepper. Transfer to the air fryer basket and cook for 20-30 minutes until crisp and golden.
- 3While the potatoes cook, heat the remaining oil in a small pan over medium-low heat. Fry the onion for 8-10 minutes until softened. Stir in the garlic and cook for 1 minute, then add the paprika and cook for 30 seconds.
- 4Add the tomato purée to the pan and cook for 1 minute. Stir in the tinned tomatoes and simmer over medium heat for 5-10 minutes until thickened slightly.
- 5Transfer the cooked potatoes to a platter, pour the tomato sauce over them, and garnish with fresh basil leaves. Serve immediately.
- 6Once the potatoes are cooked, tip out onto a platter and pour over the tomato sauce. Sprinkle with the basil leaves, then serve.
