    Heat olive oil in a large skillet over medium heat. Add ground pork, breaking it apart with a spatula as it cooks until fully cooked through, about 6-8 minutes.

    Add garlic, ginger, carrot, scallions, and cabbage. Cook, stirring regularly, until the cabbage wilts and softens, about 3-4 minutes.

    Season the filling with soy sauce and rice vinegar. Remove from heat and allow to cool completely.

    Place an egg roll wrapper on a dry surface with one corner pointing toward you. Add approximately 60 ml of filling to the center.

    Dip your fingers in water and wet the edges of the wrapper. Fold the side corners toward the center, then roll the wrapper away from you into a tight cylinder. Place seam-side down on a plate and repeat with remaining wrappers and filling.

    Arrange egg rolls in the air fryer basket in a single layer without stacking or touching. Lightly spray or brush with oil.

    Set air fryer to 350°F and cook for 6-7 minutes. Flip the egg rolls, lightly spray or brush the bottom side with oil, and cook for another 4-5 minutes until golden brown and crispy.

    Alternative pan-fry method: Heat about 1 cm of oil in a skillet to 350°F over medium-high heat. Fry egg rolls for 3-4 minutes per side until golden brown. Drain on paper towels.

    Place the basket in the air fryer and turn the air fryer to 350°F. Cook for 6 to 7 minutes, then flip the egg rolls, spray or brush with oil a second time on the bottom side, and cook for another 4 to 5 minutes.
