Air Fryer Egg Rolls

- 1Heat olive oil in a large skillet over medium heat. Add ground pork, breaking it apart with a spatula as it cooks until fully cooked through, about 6-8 minutes.
- 2Add garlic, ginger, carrot, scallions, and cabbage. Cook, stirring regularly, until the cabbage wilts and softens, about 3-4 minutes.
- 3Season the filling with soy sauce and rice vinegar. Remove from heat and allow to cool completely.
- 4Place an egg roll wrapper on a dry surface with one corner pointing toward you. Add approximately 60 ml of filling to the center.
- 5Dip your fingers in water and wet the edges of the wrapper. Fold the side corners toward the center, then roll the wrapper away from you into a tight cylinder. Place seam-side down on a plate and repeat with remaining wrappers and filling.
- 6Arrange egg rolls in the air fryer basket in a single layer without stacking or touching. Lightly spray or brush with oil.
- 7Set air fryer to 350°F and cook for 6-7 minutes. Flip the egg rolls, lightly spray or brush the bottom side with oil, and cook for another 4-5 minutes until golden brown and crispy.
- 8Serve immediately with duck sauce and plum sauce.
- 9Alternative pan-fry method: Heat about 1 cm of oil in a skillet to 350°F over medium-high heat. Fry egg rolls for 3-4 minutes per side until golden brown. Drain on paper towels.
- 10Place the basket in the air fryer and turn the air fryer to 350°F. Cook for 6 to 7 minutes, then flip the egg rolls, spray or brush with oil a second time on the bottom side, and cook for another 4 to 5 minutes.
- 11Finished egg rolls should be golden brown and crispy! Serve immediately.
