- 1Heat a medium skillet over medium heat and add 1 teaspoon oil.
- 2Add the red onion and saute until soft, 2 to 3 minutes then add the artichoke hearts, roasted peppers, and capers, drizzle balsamic vinegar over everything and stir, cook until heated through, about 1 minute.
- 3Remove from heat and add the mozzarella.
- 4Plate the romaine in a large salad bowl and pour the warm ingredients over the lettuce.
- 5Drizzle with an additional teaspoon oil and season with salt and black pepper, to taste. Eat right away.
