- 1Gather ingredients. Preheat oven to 375°F.
- 2Seed tomatoes by cutting them into quarters and scooping the seeds out. Carefully crush garlic cloves using the bottom of a cup.
- 3Add tomatoes and garlic to a parchment-lined baking sheet, season with salt and pepper, and lightly mist with cooking oil.
- 4Bake until tomatoes and garlic have wilted and toasted, 15-20 minutes. Just enough to concentrate those flavors and give them a little more depth.
- 5Add the roasted tomatoes, garlic, room temperature salted butter, and Italian herb mix to a food processor.
- 6Run the food processor until the tomatoes and garlic have been broken down and blended into the butter and seasonings.
- 7Portion out your tomato butter for future use by using an ice cube tray! Pop it in the freezer (covered with plastic wrap!) and then pop them out once hardened and store in a clean, dry container in the freezer or refrigerator.
