- 1Put the noodles into a bowl, then break up a little and pour over boiling water. Cover and leave to swell up (you can add the flavouring packs from the noodles, if you like).
- 2Season the chicken by tossing it in the chilli, paprika, garlic and some seasoning. Heat the oil in a frying pan, then fry the chicken until golden and cooked through.
- 3Drained the noodles, then combine with the vegetables. Add the mayonnaise and mustard, then gently mix everything together and place the chicken on top. Chill for 30 mins before serving – you can garnish with some fresh herbs, if you like.
