- 1In a bowl, mix the olive oil, tamari/soy sauce, vinegar, honey, jalapeños, garlic, ginger, and a pinch of pepper. Add the chicken and toss. If time allows, let sit for 10 minutes to deepen the flavor.
- 2Take the skewers and thread the chicken with the pineapple chunks. Reserve the marinade.
- 3Set your grill, grill pan, or skillet to medium-high heat. Grill the skewers until lightly charred and cooked through, turning them occasionally throughout cooking, about 10 to 12 minutes total.
- 4Meanwhile, pour the reserved marinade into a small pot. Bring to a boil and cook 5 minutes, until reduced. Brush the sauce over the skewers after grilling.
- 5To make the sesame sauce: combine all ingredients in a bowl.
- 6Serve the chicken and pineapple with limes, green onions, and sesame sauce for dipping. Enjoy!.
