- 1Over medium heat, heat butter in a large pot.
- 2Add onion, carrots and celery. Cook for 6 to 7 minutes, or until soft.
- 3Add salt and pepper to taste and stir in garlic and tomato paste. Cook for 2 minutes or until tomato paste covers the vegetables.
- 4Sprinkle flour on top and cook for 1 minute.
- 5Add seafood stock and wine. Stir in with bay leaf and thyme.
- 6Reduce heat and let mixture simmer until liquid is reduced and flavors combine.
- 7Stir occasionally and let simmer for 30 minutes.
- 8Remove bay leaf and thyme then puree in a blender until smooth, in batches as needed.
- 9Bring heat back to medium-low. Add the lobster tails. Cook for 3 to 5 minutes or until cooked through.
- 10Garnish with chives and serve immediately.
