- 1Preheat the oven to 425° F. Prick the sweet potatoes with a fork. Bake directly on the rack until tender, 35-40 minutes. Slice in half, then let cool.
- 2Meanwhile, cook the beef and onion in a large skillet until browned all over. Add the chili powder, chipotle, paprika, garlic powder, and cumin. Season with salt and pepper. Mix in the tomato paste. Add the hot sauce and 1/3 cup water. Cook another 5 minutes, then remove from the heat.
- 3Use a fork to scoop most of the flesh out of the sweet potatoes, leaving about 1/4 inch of the sweet potato in the skins. Arrange the skins on a parchment-lined baking sheet and evenly stuff with the beef. Add the cheeses.
- 4Bake 15-20 minutes, until the cheese is melted.
- 5Serve immediately, topped with lots of bacon bits and an assortment of your favorite toppings. We love mashed avocado, Greek yogurt/sour cream, green onion, cilantro, and candied jalapeños. ENJOY!.
