    Wash and sort 1 cup small dried beans such as cowpeas or black-eyes. Place them in a medium heavy-bottomed saucepan; add 5 cups water and discard any peas that float. Add 1 smoked ham hock, 1 medium onion, chopped (about ¾ cup), and 1 dried hot pepper (if using) and bring to a boil over medium-high heat. Reduce to a simmer and cook until peas are tender, but not mushy, adding up to 1 cup more water if necessary to keep peas submerged, about 90 minutes or until 2 cups of liquid remain. Add 1 cup long-grain white rice to pea mixture; cover and simmer over low heat for 20 minutes, never lifting the lid.

    Remove from the heat and allow to steam, still covered, another 10 minutes. Remove the cover and fluff with a fork; taste and season, if necessary, with kosher salt and freshly ground black pepper.
