- 1Heat a grill or grill pan to high and grill the peach slices for 2-3 minutes per side.
- 2In a cocktail shaker or glass jar, add the peach slices, thyme, lemon juice and honey, using a muddler, muddle all of the ingredients together, squishing everything to release the juices. Add the bourbon and shake to combine.
- 3Add ice to a glass and pour the drink over the ice (strain if desired). Top the glass with a little more ice and then pour the ginger beer over, gently stirring to combine. Garnish with peaches and thyme. DRINK! ?.
