- 1Put the potatoes and garlic in a large pot with salt and enough water to cover. Bring to a boil.
- 2Cover and reduce heat. Simmer for 20 minutes or until potatoes are tender.
- 3Drain and return potatoes and garlic to pan over low heat. Add sour cream and remaining ingredients. Using a masher, mash until smooth and if it's too watery, let it cook a few minutes until the texture is perfect.
- 4Season with salt and pepper to taste. Garnish with herbs.
