- 1Preheat the oven to 425° F.
- 2In a baking dish, add the butter, chicken, onions, garlic powder, paprika, chili powder, cumin, chipotle powder, and a pinch of salt. Bake for 20 minutes, or until the chicken is cooked through.
- 3Shred the chicken and toss it with the juices and seasonings in the dish.
- 4Place the tortillas on a baking sheet and rub both sides lightly with olive oil. Lay them flat and evenly layer one half of each tortilla with cheese and shredded chicken. Fold the other half over the filling to create a taco.
- 5To Bake: bake for 5–8 minutes, flip, and bake for another 5 minutes, or until the cheese has melted and the tortillas are crisp.
- 6To Fry, then Bake: heat oil in a skillet over medium heat. Add the tacos and cook for 2 minutes per side, until lightly crisp. Bake for 5 minutes to finish.
- 7To Make the Salsa. Combine all ingredients in a blender and blend until smooth. Season with salt.
- 8Serve: tacos with salsa for dipping and any other desired toppings.
