- 1Butter a 9-inch square baking pan; set aside.
- 2Pour the rice cereal into a large bowl.
- 3Combine the tahini, honey, coconut extract, vanilla extract, and salt in a small saucepan and bring to a simmer over medium heat. Reduce the heat to low and simmer for about 5 minutes, stirring occasionally, until the mixture has thinned and is well blended.
- 4Pour the tahini mixture over the cereal, add the coconut flakes, and mix well to thoroughly combine.
- 5Spoon the mixture into the prepared baking pan and spread it into an even layer. Place in the refrigerator to set for at least 30 minutes, uncovered.
- 6Cut into 9 squares and serve.
