- 1Preheat the oven to 350F and grease a 9×4 loaf pan. You can place a piece of parchment paper about 9 x 9 inches inside the pan so it’s easy to remove.
- 2In a medium bowl, mix the dry ingredients; oat flour, cocoa powder, baking powder, baking soda, and salt.
- 3In a large bowl, mash the bananas until well blended and liquidy, then add the eggs, maple syrup, and vanilla.
- 4Add the dry ingredients to the wet and stir until combined. Stir in 1/2 cup chocolate chips.
- 5Pour into the prepared loaf pan, top with the remaining chocolate chips and bake for 45 to 55 minutes or until toothpick inserted comes out clean.
- 6Remove from the loaf pan and let it cool 15 minutes before cutting.
