    Heat olive oil in a large frying pan over medium-high heat. Add diced onion and cook for 1-2 minutes until softened.

    Add chicken breast and fry for 7-10 minutes until cooked through and onions are golden.

    Grate fresh ginger over the chicken and stir in harissa spice, coating everything evenly. Cook for 1 minute.

    Add dried apricots, chickpeas, and couscous to the pan. Pour in chicken stock and stir once.

    Cover the pan with a lid or foil and remove from heat. Let stand for 5 minutes until couscous has absorbed the liquid and is tender.

    Fluff the couscous with a fork and scatter fresh coriander over the top. Serve with extra harissa on the side if desired.
