- 1Preheat the oven to 180°C (Gas 4). Line a baking tray with greaseproof paper.
- 2In a bowl, combine the cashews and icing sugar. Add the egg yolks and orange blossom water, then mix until you have a smooth, homogeneous paste.
- 3Shape small lumps of the cashew paste into balls. Roll each ball in icing sugar and place on the prepared baking tray.
- 4Push one almond into the centre of each biscuit.
- 5Bake for approximately 20 minutes until lightly golden. Watch carefully as they burn easily.
