- 1Combine tamarind pulp and granulated sugar in a bowl. Mash together with a spoon or fork until well combined.
- 2Roll small amounts of the mixture between your palms to form balls roughly the size of a marble.
- 3Pour remaining sugar onto a flat surface. Roll each tamarind ball in the sugar until evenly coated.
- 4Eat immediately for a softer texture, or allow to set for several hours or overnight for a firmer interior and more crystallized sugar coating.
