Bread and Butter Pudding
This is comfort in a dish—buttery bread soaked in a silky custard studded with plump sultanas and fragrant with cinnamon and nutmeg. Golden and bubbling from the oven, it's warm, custardy, and utterly irresistible.

- 1Grease a 1 litre pie dish with butter.
- 2Cut the crusts off the bread. Spread one side of each slice with butter, then cut into triangles.
- 3Layer the bread (buttered-side up) and sultanas in the dish, sprinkling each layer with cinnamon, until all bread is used. Finish with a layer of bread.
- 4Gently warm the milk and double cream in a pan over low heat until steaming—do not boil.
- 5Whisk the eggs with three quarters of the sugar in a bowl until pale.
- 6Stir the warm milk and cream mixture into the eggs, then strain the custard through a fine sieve.
- 7Pour the custard over the bread layers. Sprinkle with nutmeg and remaining sugar. Let stand for 30 minutes.
- 8Preheat the oven to 180°C.
- 9Bake for 30-40 minutes until the custard is set and the top is golden brown.
