- 1Make the Big Mac sauce by combining mayonnaise, white wine vinegar, mustard, and minced onion in a bowl. Season with salt and pepper, then chill until ready to use.
- 2Season the minced beef with salt and pepper. Form into 4 balls of about 75g each, place on baking paper, and flatten into 15cm circles.
- 3Heat olive oil in a large frying pan over high heat. Cook the beef patties in 2 batches for 1–2 minutes per side until lightly charred and cooked through. Set aside and keep warm.
- 4Slice each sesame seed bun horizontally into three layers, then lightly toast.
- 5Assemble each burger: spread Big Mac sauce on the bottom bun layer. Add chopped onion, shredded lettuce, a slice of cheese, one beef patty, and pickle slices. Place the middle bun layer on top and spread with more sauce, then add onion, lettuce, pickles, and the second beef patty. Finish with another layer of sauce and the top bun lid.
