Beef Lo Mein

    In a bowl, combine beef with salt, white pepper, 1 teaspoon sesame seed oil, half an egg, cornstarch, and 1 tablespoon oil. Mix until the beef is evenly coated and set aside for 15 minutes.

    Bring a pot of water to a boil. Add noodles and cook for 10 seconds, stirring gently. Drain and rinse under cold water to cool. Set aside.

    Heat 2 tablespoons oil in a wok or large skillet over high heat. Add the marinated beef and cook until medium-cooked, about 3-4 minutes. Transfer to a plate.

    Add 2 tablespoons oil to the wok. Stir-fry the onions, minced garlic, and minced ginger for 30 seconds until fragrant.

    Add bean sprouts and mushrooms, cooking for 1-2 minutes. Pour in 375 ml water, bring to a simmer, and cook until vegetables are just tender, about 2-3 minutes.

    Add the cooled noodles to the wok and toss gently.

    In a small bowl, whisk together oyster sauce, soy sauce, 1 teaspoon sesame seed oil, sugar, and white pepper. Pour the sauce over the noodles and vegetables.

    Return the cooked beef to the wok. Toss everything together over high heat for 1-2 minutes until the noodles are coated and heated through. Serve immediately.
