- 1Heat olive oil in a large pot over medium-high heat. Sauté onion and garlic until the onion softens, about 2-3 minutes.
- 2Add the beef and sauté until the exterior is lightly browned, about 5 minutes.
- 3Add soy sauce, tomato puree, and water. Bring to a boil.
- 4Add beef stock cube. Cover with a lid and simmer for 30 minutes until beef is tender.
- 5Meanwhile, in a separate pan, fry the carrot and potato until golden brown. Set aside.
- 6Stir in chilli powder and peanut butter until well combined.
- 7Add the bell peppers and the fried potatoes and carrots. Cover and cook for 5-7 minutes until peppers soften slightly.
- 8Season with salt and ground black pepper to taste. Serve hot.
