- 1In a stand mixer bowl, combine warm water, a pinch of sugar, and yeast. Allow to sit until frothy, about 5-10 minutes.
- 2Add 115g sugar, warm milk, melted butter, eggs, and salt to the same bowl. Whisk until combined.
- 3Attach the dough hook to the mixer. Add flour gradually with the machine running until a smooth but slightly sticky dough forms.
- 4Transfer dough to a bowl, cover with plastic wrap, and proof for 1½ hours until doubled.
- 5Divide dough into 12 equal pieces. Roll each piece into a long oval shape, about 6mm thick, resembling a beaver's tail.
- 6Heat oil to 175°C in a large, deep pot. Gently place each tail into the hot oil and fry for 30-45 seconds per side until golden brown.
- 7Drain on paper towels. Toss with cinnamon sugar, dust with icing sugar and lemon zest, or top with Nutella and toasted almonds.
