Bacon Mac ’n’ Cheese Jalapeño Bites

- 1Preheat the oven to 350°F. Line a baking sheet with parchment paper or foil and spray with nonstick cooking spray.
- 2Cut each jalapeño in half lengthwise, leaving the stem intact, and remove the seeds. Slice a small sliver off the back of each half so that the jalapeños sit flat on the baking sheet, being careful not to slice all the way through. Place the jalapeño halves, cut sides up, on the prepared baking sheet.
- 3In a medium pot, cook the macaroni to al dente according to the package directions. Drain.
- 4Using the same pot, melt the butter over medium heat until it starts to sizzle. Add the flour, salt, and pepper and whisk until smooth, about 5 minutes. Slowly pour in the milk and whisk continuously. Continue to whisk occasionally until the mixture starts to thicken, about 3 minutes. Add 1½ cups of the shredded cheddar and stir until melted. Remove from the heat.
- 5Add the cooked macaroni to the cheese sauce and stir to coat evenly. Stir in ⅓ cup of the crumbled bacon. Let set for 5 minutes to cool and thicken slightly.
- 6Fill each jalapeño half with mac ’n’ cheese and sprinkle with the remaining cheese and bacon.
- 7Bake for about 20 minutes, or until the jalapeños are soft and the cheese starts to turn golden brown on top.
- 8Serve immediately, or keep warm in a 200°F oven until ready to serve.
