- 1Preheat the oven to 180°C. Grease a cake pan and line it with baking paper.
- 2In a large bowl, beat 4 eggs with sugar until the mixture has tripled in volume and become fluffy.
- 3Sift the self-raising flour and fold it into the egg mixture, preserving as much air as possible.
- 4Add the melted and slightly cooled butter and mix until combined.
- 5Fold in the ground cinnamon, a pinch of salt, and vanilla extract.
- 6Add diced apple to the batter and gently fold until evenly distributed.
- 7Pour the batter into the prepared cake pan and smooth the top with a spatula.
- 8Arrange apple slices on top of the batter and press lightly. Optionally sprinkle with almond shavings.
- 9Bake for 45–50 minutes, until a wooden skewer inserted into the center comes out clean.
