- 1Heat oven to 190°C (170°C fan/gas mark 5).
- 2Combine flour and caster sugar in a large bowl. Add butter and rub between your fingertips until the mixture resembles breadcrumbs; do not overwork.
- 3Spread the crumble mixture evenly on a baking sheet and bake for 15 minutes until lightly golden.
- 4While the crumble bakes, peel, core and dice the apples into 2 cm pieces.
- 5In a medium saucepan, melt butter and demerara sugar together over medium heat for 3 minutes until it turns a light caramel.
- 6Stir in the diced apples and cook for 3 minutes.
- 7Add the blackberries and cinnamon, cook for 3 minutes more, then remove from heat and cover. Let sit for 2–3 minutes to finish cooking in the residual heat.
- 8Spoon the warm fruit compote into an ovenproof gratin dish and top with the baked crumble mixture.
- 9Reheat in the oven for 5–10 minutes.
- 10Serve warm with vanilla ice cream.
