  1. 1
    Heat oven to 190°C (170°C fan/gas mark 5).
  2. 2
Combine flour and caster sugar in a large bowl. Add butter and rub between your fingertips until the mixture resembles breadcrumbs; do not overwork.
  3. 3
Spread the crumble mixture evenly on a baking sheet and bake for 15 minutes until lightly golden.
  4. 4
While the crumble bakes, peel, core and dice the apples into 2 cm pieces.
  5. 5
In a medium saucepan, melt butter and demerara sugar together over medium heat for 3 minutes until it turns a light caramel.
  6. 6
Stir in the diced apples and cook for 3 minutes.
  7. 7
Add the blackberries and cinnamon, cook for 3 minutes more, then remove from heat and cover. Let sit for 2–3 minutes to finish cooking in the residual heat.
  8. 8
Spoon the warm fruit compote into an ovenproof gratin dish and top with the baked crumble mixture.
  9. 9
Reheat in the oven for 5–10 minutes.
  10. 10
Serve warm with vanilla ice cream.
