- 1Preheat oven to 180°C (160°C fan/gas 4).
- 2Combine oats, desiccated coconut, plain flour, and caster sugar in a bowl.
- 3Melt butter in a small pan and stir in golden syrup. Add bicarbonate of soda to 2 tablespoons boiling water, then stir into the butter and syrup mixture.
- 4Make a well in the centre of the dry ingredients and pour in the butter and golden syrup mixture. Stir gently until combined.
- 5Place dessertspoonfuls of mixture onto buttered baking sheets, spacing them 2.5 cm apart to allow for spreading.
- 6Bake for 8-10 minutes until golden. Transfer to a wire rack to cool.
