    Preheat oven to 180°C (160°C fan/gas 4).

    Combine oats, desiccated coconut, plain flour, and caster sugar in a bowl.

    Melt butter in a small pan and stir in golden syrup. Add bicarbonate of soda to 2 tablespoons boiling water, then stir into the butter and syrup mixture.

    Make a well in the centre of the dry ingredients and pour in the butter and golden syrup mixture. Stir gently until combined.

    Place dessertspoonfuls of mixture onto buttered baking sheets, spacing them 2.5 cm apart to allow for spreading.

    Bake for 8-10 minutes until golden. Transfer to a wire rack to cool.
